You know, the type of post or story that stops you mid-scroll to click the “save” button so you can read more later. It’s how I stumbled upon Viennoiseries (veeay-nwaz-ree) After Dark in August, a cottage bakery and after-hours croissant delivery service recently launched by an Atlanta college student with the help of her Parisian mother. “Butter + love = Paris.” That’s the motto for Viennoiseries and the founding principle behind Chloë Chadet’s cottage bakery operation on Atlanta’s west side. “I launched Viennoiseries After Dark because of our love for viennoiseries any time of the day. Late night to early morning cravings,” Chadet told me. This includes her craving for croissants in the evening, which she bakes to flaky, buttery perfection, accompanied by petite jars of homemade jam, and begins delivering just after sunset with her mother, Christelle. While croissants are synonymous with France, especially Paris, part of the buttery puff pastry’s origins lie in Vienna. Viennoiserie is a category of baked goods that bridge the gap between pastry and bread in France, made in the Viennese style. The origins of the croissant can be traced to medieval Austria and the crescent-shaped kipferl with a dough similar to brioche. It’s said the croissant we know today was invented by Austrian native and baker August Zang in 1838. He owned a Viennese-style boulangerie in Paris and transformed the crescent-shaped Viennese bread roll into a flaky, layered, laminated dough pastry. It became an instant sensation in Paris. Chadet also bakes bacon gruyere quiches (yes, please) and occasionally batches of Madeleines. A quiche, which easily serves six people, and four croissants set me back about $41, including a $5 delivery charge for being within the ITP delivery radius. Decatur Becomes the First Dine-In Location for Glide Pizza in a Very Familiar West Ponce Space Photo by Glide Pizza By Sarra Sedghi Five years after debuting as a pizza window operating out of Irwin Street Market on the Eastside Beltline, the first dine-in location of Glide Pizza opened last week in Decatur. The pizzeria took over the former Chando’s Tacos space on West Ponce, also once home to The Pinewood Tippling Room. Glide previously operated a pizza window inside Decatur brewery Inner Voice Brewing before its departure in July, and continues to operate a takeout window at StudioPlex in the Old Fourth Ward. The new location’s most significant changes are an expanded menu, full bar, and ample seating dedicated to patrons of the pizzeria. Seating is sparse, and mostly outdoors, in the Old Fourth Ward. At Inner Voice, Glide shared space with the brewery. Between the dining room and bar, Glide’s new West Ponce location accommodates up to 95 people. There’s even room for an arcade section with a NBA-regulation basketball hoop. Founder Rob Birdsong said he hopes Glide Pizza’s first full-fledged restaurant will become a neighborhood hangout for Decatur residents. With a design that evokes the space-themed restaurant Pizza Planet from the movie “Toy Story,” sprawling corner booths comfortable enough to sleep in, and a geometric carpet that screams 1990s roller rink, it’s hard not to feel like you’ve teleported back to your childhood. Secondary colors, like the persimmon benches and Western ranch-themed tile floors, give Glide an especially youthful aura in Decatur. “We’ve only ever been a walk-off window,” Birdsong said. “This is the first real opportunity we’ve had inviting people into our home.” Birdsong said much of the inspiration for Glide comes from pizza joints of the past, such as the dine-in Pizza Huts that featured video games for kids and a bar for adults, or the New York City neighborhood spots he frequented as a child. “Those places were always fun and I had a lot of core memories in my life that would come from those,” Birdsong said. “Part of this is providing that for young families and people who just don’t want to do Papa John’s and Domino’s.” Unlike its window operations, the Decatur restaurant serves an expanded menu and includes a full bar. In addition to pizza and salads, look for wings, mozzarella sticks, and meatballs, along with frozen drinks, simple cocktails, beer, and wine. “We don’t want to overly complicate things,” he said of expanding the menu and offering cocktails in Decatur. “We want to have variety, but we want it to be really good.” Birdsong will gradually add dishes to the menu as Glide gets up to speed in Decatur. Currently, the restaurant is operating in “soft opening” mode. Birdsong is all about people forging memories at Glide, similar to how he remembers pizzerias being part of his life growing up. Eventually, he plans to regularly host events, such as hoops tournaments, and introduce semi-private party packages for birthdays and anniversaries, just like at Pizza Hut back in the day. People are welcome to come in to eat and stay for hours, he said, or grab a slice to-go at the pizza window up front. After five years in business, Birdsong is still humbled by the community support for Glide. In a way, the Decatur location means Glide has come full circle. “We’ve had such a consistent, steady customer base who have continued to support us and continue to patronize us that now we need a bigger space,” he said of finally opening a dine-in pizzeria. “[In Decatur,] we can make sure that people have a great experience.” 254 West Ponce de Leon Avenue, Decatur. A recent addition to the menu, the Daily Chew soup is inspired by a similar soup owner Julia Kesler Imerman remembers her father making.“Soups were always a staple in my house growing up during the cooler months,” she said. And, for Imerman, the flavor profile of butternut squash makes it an ideal vessel for soup. “It’s sweet and earthy at the same time,” she said.Daily Chew’s butternut squash soup is vegan, utilizing coconut milk as its base. Not only does the coconut milk accentuate the soup’s aromatics, it also adds a creamy consistency to the cooked squash and onion. This recipe calls for an immersion blender, but the soup can also be made with a regular blender. Once all the vegetables are cooked and tender, transfer everything to the blender in batches. Imerman sources her produce from farmers markets, however, all of the ingredients to make Daily Chew’s butternut squash soup are easily found in a grocery store.Pair the soup with toasted bread — Imerman recommends a seedy rye — and a white wine such as chenin blanc. The soup makes a lovely accompaniment to a bold and toothsome salad like a kale Caesar.Serving Size: 4 peoplePrep Time: 15 minutesCook Time: 30 to 35 minutes Ingredients 1 medium butternut squash, peeled, seeded, and diced 1 ounce white onion, diced (about 1/4 cup) 1 Tbsp fresh ginger, minced (or 1 tsp ground ginger) 1 tsp ground nutmeg 1 tsp ground coriander 1 quart (4 cups) vegetable stock 1 1/2 cups coconut milk (unsweetened, full fat or light) 1 Tbsp neutral oil, such as olive or coconut Salt and pepper to taste Optional garnish: toasted pumpkin seeds Directions Prepare the base: Heat oil in a large pot over medium heat. Add diced onion and sauté for 2 to 3 minutes until softened and fragrant. Stir in ginger, nutmeg, and coriander. Cook for 1 more minute to bloom the spices. Cook the squash: Add diced butternut squash to the pot and toss to coat with aromatics. Pour in vegetable stock, bring to a boil, then reduce heat to a simmer. Cover and cook for 20 to 25 minutes, or until squash is tender. Blend the soup: Use an immersion blender to puree directly in the pot until smooth. You can also transfer soup to a blender in batches.Finish with coconut milk: Stir in coconut milk and let the soup gently simmer for 3 to 5 minutes. Season with salt and pepper to taste. Let cool, then garnish with toasted pumpkin seeds, if desired, and serve.
